Parmesan Sweet Potatoes
I loooove sweet potatoes but sometimes I get bored of them and want to switch it up, so this crispy parmesan version is my new obsession. they’re SO easy and they make the best side dish for pretty much anything — eggs, chicken, fish or even in a veggie bowl. recipe below!
Ingredients
- 4 small sweet potatoes, cut in half lenthwise
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning or other spice blend
- 1/2 cup finely shredded parmesan cheese
- fresh herbs for topping, if desired (I used chives + oregano)
- olive oil or chili oil to finish (I used @wearebrightland pizza oil and it was fab!)
Directions
- preheat your oven to 400F and line a baking sheet with parchment.
- place your sweet potatoes in a bowl and add the olive oil, garlic powder, spice mix and some salt + pepper. mix until sweet potatoes are well coated.
- sprinkle parmesan cheese onto your baking sheet and spread so that it's evenly coated.
- place sweet potatoes cut-side down on top of the parmesan.
- bake for 30-40 minutes until sweet potatoes are tender and the bottom layer of cheese is crispy and deeply browned. remove, let cool
- serve topped with herbs and oil!
